Browned butter frosting :-))

Well, last week was extremely busy in the bake... kitchen! I had a wedding cake, lots of celebration cakes and a couple of boxes of cupcakes! I've just boxed up a dozen red velvet cupcakes and thought I'd squeeze in time to write a quick blog post.

One of my orders was for a spiced apple cake for a gentleman turning 50 and loving all things apple. My spiced apple cake recipe is one of my favourites and in the past I've teamed it with either vanilla buttercream, salted caramel buttercream (another of my faves) or cream cheese frosting. This time, however, I tried a new recipe...browned butter frosting... OMG. New favourite!!

Ingredients: (makes enough to fill & frost an 8" cake)

75g butter

470g icing sugar

1 1/2 tsp vanilla extract

3 tablespoons milk

1/4 tsp salt

Method:

Melt the butter in a small saucepan over a medium heat. Continue cooking, stirring continuously and watching closely. After about 5 minutes, the butter will start to get all foamy and turn golden. Remove from heat immediately and cool completely.

Sift the icing sugar into your bowl and add the cooled browned butter, vanilla & salt. Beat at a medium speed, gradually adding the milk and scraping down the sides to ensure everything is incorporated. Beat until smooth and light.

The brown butter gives the frosting a toffee note to the flavour which is why it worked so well with the apple cake. I shall certainly be making this again! If you decide to give it a go, let me know how you get on.
